Potato Salad with Shrimp, Avocado, and Fresh Herbs
Ingredients (serves 4)
600g firm potatoes
250g peeled shrimp
1 ripe avocado
1 small green salad or a few lettuce leaves
2 tablespoons chopped fresh parsley
1 tablespoon fresh dill (optional but delicious)
1 garlic clove
1/2 lemon
3 tablespoons mayonnaise
1 tablespoon plain yogurt or crème fraîche
2 tablespoons olive oil
1 pinch smoked paprika
Salt and pepper
