Jamie Oliver’s onion soup, which is still a poem after all these years! Rich, spicy and incredibly delicious

Recipe preparation:
Peel the onion and slice it thinly with a vegetable slicer. Strip the thyme leaves from the stems, peel and finely chop the garlic, and grate the Gruyère cheese.
Place a large saucepan on the stove and heat over low heat. Add the olive oil to the saucepan along with the butter, onion, thyme, garlic and bay leaf, then simmer the onion, covered, for 15 minutes to prevent it from browning. Stir occasionally to prevent the onion from sticking to the bottom.
