Homemade Vanilla Dessert Cream

Split the vanilla pod in half lengthwise.

Scrape the seeds out using the tip of a knife.

Pour the milk into a saucepan, add the vanilla seeds and the empty pod.

Bring gently to a boil, then remove from heat and let steep for 10 minutes.

2. Mix the eggs and cornflour.
Meanwhile, in a bowl, whisk the egg yolks with the sugar until the mixture turns white.

Next, add the cornflour and mix until you obtain a homogeneous mixture.

3. Make the cream.
Remove the vanilla pod from the milk.

Gradually pour the lukewarm milk over the egg-sugar-cornflour mixture, whisking constantly to avoid cooking the eggs.

Pour everything back into the saucepan.

Cook over low heat, stirring constantly with a spatula, until thickened. Be careful not to let it boil to avoid lumps forming.

4. Cool and serve.
Once the cream has thickened, remove from the heat.

Divide the hot cream into ramekins.

Allow to cool to room temperature, then refrigerate for at least 2 hours before serving.

Tips for making a successful Homemade Vanilla Dessert Cream:
Gentle temperature: Always cook over a low heat to prevent the cream from curdling or forming lumps.

Quality vanilla: Use a real vanilla bean for a more authentic flavor than artificial extract.

Anti-skinning tip: To prevent a film from forming on the cream during cooling, place a piece of cling film in direct contact with the surface of the cream.

Lighter texture: You can replace some of the milk with liquid cream for an even creamier result.

Gourmet variations of Homemade Vanilla Dessert Cream:
Vanilla-caramel cream: Add a spoonful of liquid caramel when serving for an even more indulgent dessert.

Vanilla-chocolate cream: Add some dark chocolate shavings to the cream before serving, or make a marbled version by incorporating some cocoa into half of the preparation.

Plant-based version: Replace whole milk with almond or soy milk for a cream suitable for vegan diets.

Custom flavoring: Why not add a touch of lemon or orange zest for a slightly tangy cream?
