Preparation:

Mash the dates in a food processor.

Add the ground white poppy seeds and almonds (or oatmeal).

Mix in the honey, lemon zest, lemon juice, and coconut oil.

Mix until you get a moldable mass.

Shape into walnut-sized balls.

Refrigerate for at least 30 minutes.
You can spin the finished energy balls:

in coconut flakes

ground white poppy seeds
-
in cocoa powder
-
in chopped pistachios
