Without a doubt, one of my all-time favorite cookies!

Preparation:
Preheat the oven to 175°C and line a   baking tray   with baking paper. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. 

Add the vanilla extract and eggs and mix well.
In a separate bowl, mix the flour,   baking powder   and salt. Gradually add the dry ingredients to the wet mixture and mix until you have a soft dough. Using a tablespoon or cookie scoop, scoop balls of the dough onto the prepared baking sheet, about 2 inches (5 cm) apart. Gently flatten the balls with the back of a fork or your fingers. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
