My Grandma’s Bolognese Ragù: The Traditional Recipe with a Secret Ingredient

Ragù alla Bolognese is a classic Italian dish, but grandma’s version always has something special. Her version not only follows tradition, but includes a secret ingredient that makes the sauce incredibly flavorful and creamy. Ingredients for a perfect ragù

For about 4-6 people:

  • 500 g of mixed minced meat  (beef and pork).
  • 1 carrot , finely chopped.
  • 1 celery stalk , finely chopped.
  • 1 onion , finely chopped.
  • 200 g of tomato puree .
  • 50 g of tomato paste .
  • 1 glass of whole milk  (grandma’s secret ingredient!).
  • 1/2 glass of red wine .
  • Extra virgin olive oil  to taste
  • Salt and pepper  to taste
  • A knob of butter . 1 bay leaf  (optional).

Procedure

  1. Prepare the soffritto:
    In a large saucepan, heat a drizzle of extra virgin olive oil and a knob of butter. Add the chopped carrot, celery, and onion. Sauté over low heat until the vegetables are soft.
  2. Brown the meat:
    Add the ground beef to the soffritto and cook over medium heat. Stir constantly to break up the meat and brown it evenly.
