Ingredients for a perfect ragù
For about 4-6 people:
- 500 g of mixed minced meat (beef and pork).
- 1 carrot , finely chopped.
- 1 celery stalk , finely chopped.
- 1 onion , finely chopped.
- 200 g of tomato puree .
- 50 g of tomato paste .
- 1 glass of whole milk (grandma’s secret ingredient!).
- 1/2 glass of red wine .
- Extra virgin olive oil to taste
- Salt and pepper to taste
- A knob of butter . 1 bay leaf (optional).
Procedure
- Prepare the soffritto:
In a large saucepan, heat a drizzle of extra virgin olive oil and a knob of butter. Add the chopped carrot, celery, and onion. Sauté over low heat until the vegetables are soft. - Brown the meat:
Add the ground beef to the soffritto and cook over medium heat. Stir constantly to break up the meat and brown it evenly.
