Preheat oven and prepare springform pan: Preheat the oven to 190°C (375°F). Grease a springform pan (approx. 26 cm/10 inches) and dust with flour.
Prepare batter: Cream the butter with the sugar, vanilla sugar, and a pinch of salt until light and fluffy. Beat in the eggs one at a time. Mix the flour, baking powder, and pudding powder, and then alternately stir this mixture and the milk into the batter until smooth.
Prepare apples: Wash, peel, core, and chop the apples into small pieces. Gently fold them into the batter.
Bake: Pour the batter into the prepared springform pan and bake in the preheated oven for 40–50 minutes. Test for doneness with a wooden skewer.
Cool: Remove the cake from the oven, let it cool briefly in the pan, and then turn it out onto a wire rack.
