Here’s a super-quick, 10-minute garlic-parmesan zucchini fritter recipe, which is also a big favorite of ours:

Preparation:

  1. Preparation: Grate the zucchini on a large grater. Sprinkle with a pinch of salt, let stand for 2 minutes, then squeeze out the juice thoroughly . This is the secret to ensuring the end result is not watery!

  2. Assembly: In a bowl, mix the squeezed zucchini with the eggs, flour, crushed garlic, and grated cheese. Season with pepper to taste.

  3. Frying: Heat a little oil in a frying pan. Scoop out small mounds of the mixture and flatten them. Fry for 3-4 minutes on each side until golden brown and crispy.

Tips for results:

It tastes best with a little Greek yogurt or garlicky sour cream. If you want to make it even more special, sprinkle fresh dill or chili flakes on top for a spicier flavor.
