Chocolate muffins

  • 2 teaspoons baking powder

  • ½ teaspoon baking powder

  • ½ cup (120 ml) vegetable oil or melted butter

  • 1 cup (240 ml) milk

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 cup chocolate chips, plus a little for topping

Instructions

  1. Preheat the oven
    Preheat the oven to 200°C (400°F). Line a muffin tin with paper cups.

  2. Mix the dry ingredients.
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until smooth.

  3. Mix together the wet ingredients.
    In a separate bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract until smooth.

  4. Mix the batter.
    Pour the wet ingredients into the dry ingredients. Mix gently until combined. Do not overmix, there will be a few lumps.
